Over the weekend, Keith and Melanie hosted a fish fry for Brooks' 31st B-day. He has been wanting a fish fry...hear me when I say...for FOREVER....and he finally got his fish fry! :-)
The food was really good and everyone had a good time cooking and hanging out. The menu consisted of: fried catfish and some other type of fish, fried hush puppies, homemade french fries, coleslaw (made by Nannie), and a homemade chocolate layer cake. I had been wanting to try my hand at a chocolate layer cake like the one Melanie makes...so she helped me out a little. The cake turned out pretty good but I think I may have mixed the icing for a little too long b/c it was so difficult to spread. It was basically clumping up and falling off before I could get it spread. Oh well...the cake isn't the prettiest but at least it still tasted good!
We were glad that we got to spend time with the family and especially Brad, Amy, & Paxton, our little nephew, who we rarely get to see...so that was nice and he was precious like always!
